James Bailey, Director of Dining Services at Freedom Village James has been working for Freedom Village in Holland, MI since February of 2008. Prior to joining Freedom Village Chef Bailey was the owner/operator of Munchey’s Café located in Rockford, MI and has worked in contract dining as well as experience in private clubs. Chef Bailey obtained his BA in Hospitality Management through Grand Valley State University and has culinary training and degrees from GRCC and CIA-Greystone (Napa Valley, CA). Chef Bailey is a long time resident of West Michigan and currently resides in Grand Rapids, with his wife and children. Chef Bailey has won a National Grand Prize for his recipes. Chef Bailey enjoys the times when he is given a variety of fresh ingredients and is challenged to create and prepare delightful and well balanced meals.
Scott Konchek, Regional Director of Dining Services for Brookdale Senior LivingScott is the Regional Director of Dining Services for Brookdale Senior Living, who owns Freedom Village in Holland, MI. He has been with Brookdale for the three years. Scott moved to the Holland area from Pittsburgh, PA when he accepted the position at Freedom Village. He and his family thoroughly enjoy being in West Michigan and look forward to spending many more years here. Prior to working at Freedom Village Scott worked in contract food service for several years in the senior dining environment. He graduated with honors from Robert Morris University which is located in Pittsburgh, PA with a BSBA in Hospitality and Tourism Management. Although not classically trained in culinary arts, Scott has a deep passion and appreciation for food. Scott enjoys using fresh, sustainable ingredients in the preparation of his dishes and enjoys bold and tantalizing flavor combinations.
